As delicious as it looks!!
When Mom rang me and told that she made carrot jam I was not expecting it to be that awesome.. I simply loved it and so did the kids. The taste of lemon and sweetness of sugar dominated the carrot and so the flavor of carrot was not there. If you won't tell your kids, they won't be able to recognize the hidden vegetable in the preserve!!
Ingredients:
Carrots 500g, peeled
Water
Sugar 400 g/ 2 cups
Lemon zest of 1
Juice of 2 Lemons
Almonds,roughly chopped 10
Method:
Slice the carrots and put them in a saucepan covered with water. Boil until very soft, then run through a food mill to puree. Stir the sugar into the puree in a saucepan. Add the lemon zest and lemon juice, bring to a boil, and cook until glassy and jammy. Remove the pan from the heat and stir through the chopped almonds . Cool. Enjoy on bread with slabs of cold butter.
