Marbled Brownies

This is exactly what has been going through in my life. I've never been so busy in my life like this ever before. ie; since March. Was it the guests, some sort of stress, the kids,yoga classes, Quran classes - I don't know ! I haven't had time to write up a post or click any pictures! Or was it  that cos my maid went back to her homeland & I was left alone with no helping hands :(
Anyways, I think that I'm not going to be that active blogger like before. I'm enjoying this part of my life which keeps me busy, which allows me to spend more time with my family and I want to take the most out of it. My fb account has been deactivated for a while now and my toddler doesn't allow me to sit infront of laptop or ipad. And I must say, I cook a lot these days :)


Ingredients:
(Book: Essentials of Baking)

Plain Chocolates 225g/ 8 oz
Butter 85g/ 3 oz
Eggs 4
Sugar 300g/ 10 1/2 oz
Plain Flour 140g/ 5 oz
Salt 1/2 tsp
Baking powder 1 tsp
Vanilla essence 2 tsp
Walnuts 115 g/ 4oz

For the plain mixture:
Butter 55g/ 2 oz
Cream Cheese 170g/ 6oz
Sugar 100g/ 3 1/2oz
Eggs 2
Plain Flour 30g/ 1oz
Vanilla essence 1 tsp






Method:

Preheat a 350F/180C/ Gas 4 oven. Line a 13*9in (33*23cm) tin with greaseproof paper and grease.

Melt the chocolate and butter over very low heat, stirring constantly. Set aside to cool.

Meanwhile, beat the eggs until light and fluffy. Gradually add the sugar and continue beating until blended. Sift over the flour, salt and baking powder and fold to combine.


Stir in the cooled chocolate mixture. Add the vanilla and walnuts. Measure and set aside 16 fl oz (450ml) of the chocolate mixture.

For the plain mixture, cream the butter and cream cheese with an electric mixer.

Add the sugar and continue beating until blended. Beat in the eggs flour and vanilla.

Spread the unmeasured chocolate mixture in the ttin. Pour over the plain mixture. Drop spoonfuls of the reserved chocolate mixture on top.

With a metal palette knife, swirl the mixtures to marble. Do not blend completely. Bake until just set, 35-40 minutes. Turn out when cool and cut into squares for serving.
