Smiley Chicken Sandwich(with apples & carrots)

Breakfast fuels us for the day. It is always said to have breakfast like a king, lunch like a queen and dine like a pauper, whereas most of us do just the opposite. Most of us makes this mistake to skip breakfast hoping to lose weight; whereas research confirms that people who eat breakfast are the most successful at weight control. If we don't refuel at breakfast and break the overnight fast, we challenge the body as the brain searches for the fuel.

It's a high-time effort to pack kids' snack box with their favourite breakfast as there is so little time in the morning. Planning is  crucial in such situations. All kids have different tastes ,which varies more often. When Noora (my doter) wants all chocolaty , Razin, my son, prefers cheesy.. But when coming to chicken, they both love it. So including chicken in their breakfast menu is the smartest choice that I make.They likes to be surprised when they open their box and a smiley sandwich can make them happy.





Ingredients:

Bread Slices
Chicken, boiled and shredded 3/4 cup
Apple ,grated 1/2 cup
Carrot, grated 1/2 cup
Spring onions 1/4 cup
Mayonnaise 2-3tbsp
Butter
Salt
Pepper
Lettuce

Method

Cut the bread slices and lettuces in round using a cookie cutter, a glass or anything similar.You can toast your bread if you need.

Mix together shredded chicken,grated apple and carrots together alongwith mayonnaise.(Use grater with small hole to grate apples) Mix in spring onions to it. Season it with salt and pepper. Your filling is ready to be sandwiched.

Spread butter on your bread slice, top it up with lettuce and then the chicken filling. You can keep one more lettuce if required. Sandwich with another slice of bread. You can either toast it or serve cold.

Be creative and serve the way your kid loves it. They eat with their eyes. :)

Bread Pakora/Pakoda

'Bread Pakore ki Kasam' ....

For those who don't know.... ' Bread Pakora is a street-snack available allover  north India which recently got its fame through YRF's 'Band Baaja Baarat' in which Ranbir Singh says 'Bread Pakore ki Kasam' throughout the movie. It was when I saw this movie again recently that I remembered about this post being pending since last ramadan.

Pakoras and lots of varieties are seen in almost all parts of India, but North Indians are experts in this. We keralites are unfamiliar about pakoras apart from the one with dal (Parippu vada) and the other with onion (ullivada).. & haa yes.. uzhunnu vada.

 During last ramadan, I did post one recipe  'Bhindi Pakoras which was delicious ,spicy and crispy too. This one is usually served with a chutney ,which can be plated separately as a dip or pour over pakoras. I got this recipe from one of my fb friends, Femi Ansari, more than a year now. You can substitute thinly sliced Eggplants/Brinjal instead of breads.

Ingredients:

For Batter:

White Bread
Besan (chick pea flour)/kadalapodi 1 cup
Rice flour/Arippodi 1 tbsp
Salt
Cumin powder 1 tsp
Green chilly 2 finely chopped
Coriander 1/2 cup ,chopped
Water ,enough for the batter (about 3/4 cup)

for chutney:

Youghurt 1 cup
Coconut 1/2cup
Tomato 1/2
Coriander 3 tbsp
Cumin seed 1 tsp
Red chillies 3 pcs

Method:

Heat oil in a karahi.

Mix all the ingredients of the batter till smooth and make sure that the consistency should be fair enough to dip the batter and that the bread should be coated nicely. It should not be too thin to be coated nor too thick. I like it slightly thick whereas many prefer thin batter. That completely depends on you.

Cut breads in triangular or any other shapes.

Dip breads in the batter one at a time and deep fry  till nicely brown & crispy.

For chutney, blend all the ingredients together.

Mocha Brownies



Ingredients:
(Makes 16)


Butter 2 oz
Chocolate 4 oz
Brown Sugar 6 oz
Eggs 2
Coffee 1 tbsp, dissolved in 1 tbsp hot water
Plain Flour 3 oz
Baking powder 1/2 tsp
Chopped walnuts2 oz






Method:


Melt chocolate and butter and set aside to cool.
 Beat sugar and eggs and fold in the chocolate mixture and cooled coffee.
 Fold in sifted flour ,baking powder and walnuts. 
Pour in a greased and lined 8" square tin and bake at 180C for 25 minutes. Cool in tin and then remove from tin, peel off paper and cut in squares and serve.


FOR GANACHE


Nesquick Chocolate milk powder 1 tbsp
Caster Sugar 1 1/2 tbsp
Whippin Cream 2 tsp
Butter 1 tbsp


Melt these ingredients in a pan untill warm. Pour this over the brownies.

Tandoori Chicken

A most popular Indian chicken dish which is cooked in a clay oven called a tandoor, this is exteremely popular in the west and appears on the majority of the restaurant menus. Though the authentic tandoori flavour is very difficult to achieve in conventional ovens, this version still makes a very tasty dish. This recipe has been adapted from Masala Mornings.
Ingredients:


4 Chicken Quarters(leg+thigh pieces)
ginger garlic paste 1 tbsp
salt 1 tsp
turmeric 1/2 tsp
chilli powder 1 tsp
garam masala 1 tsp
cumin crushed 1 tsp
lemon juice 2 tbsp
yogurt 2 tbsp
orange red color a pinch
oil 1/2 cup



Method:

1. Skin, rinse and pat dry the chicken quarters. Make 2 slits into the flesh of each pice, place in a dish and set aside.

2. Mix together the yogurt, garam masala, ginger, garlic, chilli powder, turmeric, crushed cumin, lemon juice, salt, red colouring and oil. and beat so that all the ingredients are well mixed together.

3. Cover the chicken quarters with the spice mixture and leave to marinate for about 3 hrs.

4. Preheat oven to 240C. Transfer the chicken pieces to an ovenproof dish.

5. Bake in the preheated oven for 20-25mts. or until the chicken is cooked right through and browned on top.

6. Remove from the oven, transfer onto a serving dish and garnish with the salad leaves, lime and tomato.

Smiley Chicken Sandwich(with apples & carrots)
